A seafood and "farm-to-table" restaurant inspired by the local Thor Heyerdahl's adventures and explorations.

Restaurant Færd reflects not only the flavors discovered during his travels but also the lifestyle and places they visited. The strong connection between people and food is emphasized by telling the story behind each dish and the origins of the ingredients.

Our kitchen honors the ingredients through traditional preservation techniques – fermentation, curing/salting, and smoking – allowing the stories of the land and sea to come forth.
 

The chef's carefully selected dishes create a perfectly harmonious meal. A sustainable flow of seasonal ingredients and a social and unhurried dining experience.

Food Philosophy

Færd celebrates a rich culinary heritage rooted in local agriculture and food production.
Inspired by the adventures of Thor Heyerdahl and historical expeditions, our kitchen explores the flavors discovered during these journeys.

Each dish honors local ingredients and reflects the diversity of Vestfold's landscape. Drawing inspiration from the lifestyle of explorers and the places they visited, the menu creates an exciting combination of flavors and techniques.

Social dining is more than just food – it is community. Around the table, both meals and moments are shared, and relationships are strengthened through presence and good conversations.

Our commitment to sustainability ensures that each ingredient tells a story about the region's agriculture and maritime life, in harmony with the seasons.

THE MENU

The menu is designed as a social experience – a flavorful journey through several servings, with dishes meant to be shared. We recommend 4–6 dishes per table to provide a good insight into both local and global flavors.

The focus is on the intensity of flavor, where the soil of Vestfold meets spices from the world's oceans.

For guests who desire a more classic main course, we also offer a selection from the grill. Premium cuts of meat, seafood, and seasonal vegetables. The dishes are prepared quickly over intense heat to achieve a rich and distinctive grill crust – a tribute to our ancestors' primitive cooking methods.

Skjærgårdshagen is an idyllic garden and experience area located at the edge of the coast in Brunlanes. Here, lush planting meets the open archipelago landscape, with views of the sea and rocky shores. The garden is known for its calm atmosphere, beautiful flower beds, and thoughtful design that reflects the nature around it. Visitors can stroll along paths, enjoy the quiet, and experience a harmonious combination of garden art and coastal nature.

Berggren Brothers

Berggren Brothers is one of the oldest fishmongers in the country, founded in 1911.
The location is central – right in the harbor of Sandefjord. Daily, they catch fish and seafood from the local areas. With a strong connection to the coast and long traditions in the craft, they deliver fresh, high-quality ingredients straight from the sea. Their work is characterized by respect for nature, sustainable methods, and pride in local seafood traditions.

Confectionery Manufacturing

Julia Glöckner in Confectionery Manufacturing is a passionate small-scale chocolate producer, based at a charming small farm in Kjose, outside Larvik. She creates handmade chocolates with great precision and love for the craft - including our Farris Bad signature chocolate - which offers an exquisite tasting experience of our own rooibos tea.

With an eye for detail and aesthetics, she conjures up the most beautiful small artworks of chocolate, where taste, quality, and ingredients are at the forefront.

Kvelde Mill

Kvelde Mill is a traditional village mill, which still swears by grinding the flour with stones. Stone grinding provides an increased quality of flour and baked goods. The grain is sourced from the lush Lågendalen and surrounding villages. These are fertile and fruitful areas, richly blessed with sun, rain, and fresh air from the forest and sea. This gives the mill a raw material of the highest quality with a high nutritional content.

In the heart of our neighboring town Sandefjord, you will find The Old Smokehouse – a smokehouse that is based on genuine craftsmanship and proud, traditional methods.

De deler lidenskapelig inspirasjonen bak hver rett, og skaper en varm og inkluderende atmosfære. Kunnskap om menyen gir gjestene en rikere opplevelse gjennom detaljer og historier, kombinert med en avslappet stemning.
 

Måltidene

FROKOST
På morgenen preges restauranten av en skandinavisk tilnærming. Frokostbuffeten tilbyr et kuratert utvalg av sesongens frukt og regionale spesialiteter, som skaper en nordisk morgenstemning.

LUNSJ
Når dagen går over i lunsj, tilpasses atmosfæren og konseptet SMAK&BALANSE serveres. En kald salatservering settes på bordet med flere valgmuligheter, mens varme retter tilberedes av kokkene i det åpne kjøkkenet. Avslutningsvis forsyner du deg av en dessertbufffet.

MIDDAG
Restauranten transformeres til en mer avslappet middagsscene når solen går ned. Bordene dekkes stemingsfullt og behagelig. Kveldsmenyen legger opp til en uformell og behagelig spiseopplevelse - en færd for sansene gjennom lokal mat, tilberedt med inspirasjon fra hele verden.

Med fokus på kvalitet og opprinnelse fremhever vi hver drikkevare i kombinasjon med lokale ingredienser.
 
FARRIS-VANN
Det lokale Farris mineralvannet stammer fra regnvann som filtreres gjennom lag av moreneavsetninger over 15–20 år. Dette gir en unik mineralsammensetning med blant annet natrium, magnesium, kalsium, kalium, klorid, bikarbonat, sulfat og silisium.

COCKTAILS
Baren følger samme filosofi som kjøkkenet og knytter sammen kropp, sinn og sjel.
Farm-to-glass-konseptet speiler historiefortellingen i menyen. Hver cocktail forteller sin egen historie og forsterker helhetsopplevelsen. Cocktailene fremhever lokale ingredienser fra Larvik, Norge og Norden, som: tang og tare, multe og tindved. Disse kombineres med smaker inspirert av sauna-ritualer som bjørk, lavendel og mjød. Signaturdrinkene fokuserer på friskhet og spa-inspirerte smaker, noe som gir en følelse av oppvåkning og fornyelse.

VIN
Vinprogrammet tilbyr en sofistikert og variert opplevelse inspirert av gamle vintradisjoner, kombinert med nye regioner.

Et spesielt fokus ligger på hvitvin som passer til grillede proteiner, blant annet: vin fra Jura, modnet Riesling og hvit Burgund. Nye regioner som Mencía fra Ribeira Sacra tilfører en moderne dimensjon og passer godt til grillede grønnsaker og kjøtt.
 
HELSEDRIKKER
Med inspirasjon fra livsstilen ved Farris Bad fokuserer drikkeprogrammet også på velvære. Botaniske drikker laget av norske ville planter inkluderer: fermenterte drikker, naturlig musserende te, urter og krydder.
Et samarbeid med en norsk produsent av musserende te styrker den lokale forankringen. Ingredienser med helseegenskaper inkluderer: kanel – kan bidra til å regulere blodsukker, peppermynte – kan lindre fordøyelsesplager. salvie – kan støtte hukommelse og hjernefunksjon. En viktig del av tilbudet er kombucha, kjent for sine probiotiske egenskaper og støtte til immunforsvaret.
